Chicken and Pork Adobo

Adobo is a popular Filipino dish made with meat marinated in a savory base of vinegar and garlic, soy sauce, and spices.



2 lbs chicken cut into small chunks (I prefer boneless chicken thighs)

1 lb pork, cut into 1 inch cubes

1 whole bulb garlic, peeled and crushed

1 large onion sliced

¼ cup white vinegar

½ cup soy sauce

¼ cup oyster sauce

1 chicken bouillon

1 tsp ground black pepper

3 bay leaves

1 cup water


Combine the pork, vinegar, soy sauce, oyster sauce, garlic, onions, pepper, bay leaves and water and bring to a boil in a thick bottomed pot.

Simmer until the pork is cooked (about 10 minutes). Add the chicken and simmer for 20 minutes.


Serve with your favorite rice!
